All-weather picnics in glorious Cornish landscapes

SoupCornish cottages holidays are increasing in popularity all year round as more and more Brits decide to stay home for the holidays, whatever the weather. Even the humble picnic, once the exclusive preserve of those rare hot summer days, is becoming an all-season treat for the people who stay in our smart holiday homes.

Because the average Cornish holiday cottage these days is extremely well equipped, and the Cornish countryside and beaches are so stunning even when it’s freezing cold, our guests are becoming dab hands at creating delicious food to eat on the hoof!

One of the most popular outdoor dishes is good old soup: easy to make, easy to transport and easy to eat. The famously delicious Cornish Pasty is also a brilliant picnic treat, first created for miners to carry deep into the earth with them.

When you take advantage of our Cornish holiday cottages with dogs accompanying you, it’s easy enough to pack a can of doggie food and a tin opener in your rucksack so he or she can join the family’s outdoor feast and enjoy the fun of outdoor feasts. Kids love it too.

One of our guests left a hearty soup recipe behind for future visitors, which was very kind of her! So we thought we’d reproduce it here:

· Make a stock using water, dried mixed herbs, a stock cube, a tin of chopped tomatoes and a generous squirt of garlic puree

· Pre-cook spuds and whatever other veg you like best, adding them to your soup and leaving it to simmer for half an hour so the flavours really come through

· Add kidney beans, butter beans, lentils or chickpeas for extra carbohydrate energy and a lovely, thick richness

· Bung it in a flask or two. Take a bag of grated cheese to sprinkle on top, take plastic bowls and spoons, and serve with big hunks of fresh, fragrant, thickly buttered bread from the local shop

Sounds good? It is… we’ve road tested it several times and we’re hooked. Food always tastes better outdoors, so don’t forget to bring a flask or two with you when you next visit us!
